Leizel`s Adobo Chicken Recipe

Leizel is an angel.  She’s my friend Jeffrey’s girlfriend and praise mother mary, this girl can cook! She has been cooking up some super food these last couple of days and here’s her creme de la creme: Leizel’s Adobo Chicken!

Ingredients

  • Soy sauce
  • Vinegar
  • Chicken
  • Potatoes
  • Flour
  • Red onions
  • Garlic
  • Bay leaves
  • Pineapple
  • Rice and Kang kong to serve

Super easy, cheap and fresh

Method

1: Chop onions and garlic, get some bay leaves ready

2: Wash, peel and chop your potatoes

3: Wash the Kang Kong and take off any pesky leaves

4: Put a little bit of the chicken fat in rather than oil, fry the garlic, fry the onions.

5: Add the chicken and fry, using a lid to keep that heat in with 50ml of soy sauce

6. Pop in the potatoes

7: Cook for 20 mins or until the potatoes are soft

8: Mix some flour in with water to create a paste, add this to the pot

9: Throw in the bay leaves, 3 big tablespoons of vinegar, some black pepper, the pineapple chucks (without the juice) and top with shallots.  Cook through to warm

10: Serve up with some rice, some steamed kang kong and any yummy leftovers
